<p>A novel Ce based metal-organic gel (MOG) material, based on the organic linker of tetrafluoroterephthalic acid is reported. The homogeneous transparent gel, named Ce-MOG, could be obtained through hydrothermal synthesis. Further investigation demonstrated that Ce-MOG exhibited effective nitrite (NO<sub>2</sub><sup>−</sup>) detection in kimchi, milk, pickles, sausage and spinach. Furthermore, the detection of NO<sub>2</sub><sup>−</sup> was investigated over a concentration range 10<sup>− 7</sup> to 10 mM, with a linear response observed between 7 µM and 3.0 mM. The LOD towards NO<sub>2</sub><sup>−</sup> in the simulated conditions was 7.79 µM. Anti-interference experiment manifested that the LOD towards NO<sub>2</sub><sup>−</sup> was almost unaffected by the actual testing environment.</p>
